Everyone has those few go-to recipes that they can make with ease. Especially if you work outside the home and are a parent. Few of us have time to devote to finding that perfect dinner recipe that will please the whole family and still be nutritious. You can only have so much pizza, right? So not only do we not have time to hunt and shop for new and experimental recipes, but just the time it takes to make sure you are following the directions and not screwing it up to the point of inedible, it can be seriously time consuming.
For me that go-to dinner creation is pasta salad. Living in Southern California , it is safe to say, it is summer-like almost year round. This is the perfect dish for those warm evenings when you don’t want to be measuring and cooking. Never do I pull out the measuring cups or spoons. This is one of those dishes that you can rearrange based on who is coming to dinner. How much pasta should I boil? Who cares! Dump in the whole box and have left overs the next day if it’s too much? How much garlic should I use? I suppose that depends on if you like garlic or not. If you don’t like onions, then don’t add onions. If you are on a protein kick then add in some grilled chicken. This is one of those dishes that you would seriously have to try to screw it up. But for those of you that are a stickler for a recipe or just need a little inspiration here is the recipe.
